Recipes: Vegetarian Beef Stew

OK, so I hear you wonder. Vegetarian Beef Stew? Yep. Sometimes Thomo is vegetarian and his favourite vegetarian dishes are based around beef. Now, before anyone takes me to task over this, I have to ask you, "What do cows eat"? Grass! Exactly! And grass is? Exactly! Beef is vegetarian!

It is winter. It is cold. What we want is a nice hot stew for dinner. As always, Thomo keeps the preparation and cooking time down (in this case, about 40 to 50 minutes - a little longer than he normally takes but hey, we are still only using a single pot to cook with, albeit a big one).

Sausage Soup - Inspired by Huey!



Yep, sausage soup. This recipe was inspired by watching Ian Hewitson o­n TV preparing a soup dish based around sausages.

For this you will need:

A lot of Fresh Basil
3-4 Sausages - for two to three people - thick or thin, italian, beef, pork - doesn't matter. Try the recipe with different sausages for variation
2 cans of Chopped tomato
2 o­nions (the red o­nes are nice in this recipe but any will do)
Garlic - as much as you can take
1 cup of Red Lentils
two tablespoons of Pesto (whatever flavour takes your fancy but the Basil based o­nes seem to work well with this receipe
1 litre of Beef Stock
1-2 teaspoons of olive oil (one degree of virginity or other - doesn't really matter for this disk - any other vegetable oil could be used as well - I just like olive oil).
Crusty Bread/Hard Cheese

It is a simple recipe and o­ne to go with the other sausage dish :-)

Need to get the kids to eat vegies and they won't look at them. Vegie soup is the answer, especially if you get them to help you buy the ingredients at the supermarket for the soup.

OK, so sausages and tomato sauce doesn't really sound all that flash. So, I flashed it up. This was a winner with the family, even the missus who really doesn't like sausages.

Odd Tales: Thomo's Rules of Eating and Cooking

OK, Thomo is an Aussie, which is why he was referred to in the past as the Lost Aussie. Being Aussie, of course, Thomo likes to bar-b-que food. Forget the Americans and the British - when it comes to BBQ, Aussies have it - it's a lay down misère (well, there may be a little competition from the Koreans but hey, their cooking styles are not well enough known yet to count).

I will include recipes from time to time. In the meantime, Thomo believes three things in relation to cooking:

  1. BBQ rules
  2. If not BBQ, then maximum preparation and cooking time should be 30 minutes.
  3. If it is exotic, then two saucepans is OK to cook with otherwise, maximum one (Thomo does not like to clean up and wash up).
